    Default Induction cooking?

    Has anyone embraced induction cooktops? I've read a little about them and heard some reviews from folks that have used them but I've never tried cooking with them.

    I cooked most of my life on electric coil burners. When I finally switched over to gas, it was life changing. I've heard professional chefs claim that induction is just as big an improvement over gas. Supposedly, a gas burner it might take 20 minutes to boil water while the induction can boil it in 6 minutes. An electric coil burner uses around 2500 to 3000 watts max per burner and the induction is comparable but the induction causes the pan to heat directly instead of a less efficient heat transfer. For professionals, this can mean faster cooking and cooler kitchens.

    Induction limits you to ferromagnetic metal pots and pans; steel, some stainless steel and cast iron. The burners don't get hot except for the heat they collect from the hot pots sitting on them. They're flat glass surfaces that are easier to clean, easier than electric coil flat surface glass. It all sounds intriguing and I'd love to hear some first hand experiences.

    We have an induction cooktop, still in the process of switching to stainless cookware which definitely works better than the anodized aluminum set we’ve been using for years. If gas were an option I would have gone that way.

    I have an induction burner at my desk at work. I use it for a kettle to boil water for a French press.

    It works very fast, and there's no residual heat. I like it a helluva lot better than our glass top electric range at home.

    However, if gas is an option, do that!

    I have an induction range and a convection oven. Best gift I have ever given myself. I had been using portable countertop models for years. I can boil 2 cups of water in 90 seconds and keep any temperature all day. So much faster and more consistent than gas and without the CO2. I would be more than happy to give you model numbers etc if you are interested. Do it and don't look back. MG

    I have induction for my new home and its been great. Much better and quicker than gas, that said, Im no pro chef

    Coincidentally, I talked to a chef/club manager this afternoon and asked him about induction burners. He said he really likes them a lot but said, for a household stove, he would probably favor gas because the induction burners don't last as long and eventually need to be replaced. We live near the beach and sweat through hurricane season every year so having gas to cook on when the power is out is another consideration for me. I still have PTSD from Hugo.

    I think I'm going to get a higher end, single induction burner for my farm camp and see how much I like it.

    I'm perfectly willing to use sorcery for cooking. I already use sous vide and add all kinds of stuff to my chicken bog. If that sends me to Hell, at least the food will be good down there.

    induction has several advantages:

    safety
    speed
    consistency
    cleanup- literally fry food with paper towels all around it
    space savings

    Make sure you have enough power for it. Mine has the largest wire in the house run to it. Don't skimp on this.

    I think anyone with the option is nuts to do anything else.

    I was going to say beauty was a disadvantage.. but I just googled and saw the ilve range that I'm looking at has a model. I like old fashioned type things, but it's not me who's looking so there's that.

    Better have a big ass backup genset if the power goes out. Gas, always have it. You people never cease to amaze me!

    Sorry, just saw your reply. I have a Frigidaire FCFI3083AS https://www.frigidaire.com/en/p/kitc...ges/FCFI3083AS

    It has different-sized elements and you can even bond elements together to use a long skiddle on it. In fairness, I have never had gas nor do I want gas in my home. When the power goes out, i will cook on one of my outdoor cooking options; HOWEVER, this is the best appliance I have ever owned. If you would like to come and borrow my portable induction cooktop for the holidays, I think you will be sold on induction. Just PM me and we can work it out. I kept my portable to use as one of my emergency options as it only requires 115v. MG

    help me out, MG. I get you can boil water faster. I think that's neat.
    But I cant think of other cooking scenarios that I want the heat that damn high.

    explain?

    I have gas. I think it was the chili but I also have a gas range. I dont turn it much past halfway to cook damn near anything. and if you have "non stick cookware" and you turn it to high you will lose the non stickness.....
