    Default Duck... The part you're probably throwing away

    Hearts, that's right, I said it. Stop throwing them away.

    A simple little recipe to get a tasty meal on the table, best part is the wife will never know, not that you'll want to share anyways.

    First we need some hearts.
    I've got a collection of teal, mallards, spoons, and a ringneck here.

    Get them cleaned and diced, I usually chop the top section (the part with the aorta hanging out) and toss it. The rest of the heart gets one or two slices across the middle. Drop them in a bag.

    Add to the bag, 1 teaspoon minced garlic, 1-2 tablespoons soy sauce and black pepper to your liking.

    Let that sit for about 30 minutes and it's time to break out the pan.

    Medium high heat and a little butter

    Give it a couple minutes and a few swirls in the pan and it's time to serve.

    Man I love it. It's not often that I get enough to really make a good meal out of it though. Even my wife admits it almost taste better than the breast meat.

    Eat your heart out. I love em elk, deer, hog you name it, exquisite. Don't forget to pull the Turkey hearts as well.

    Never had duck hearts but I've eaten several chicken hearts and liked them, so I'd assume it would taste the same.

    Looks good.

    Many years ago I was on a duck hunting trip in Arkansas and the guy staying next door to us invited us over to eat dinner. He was a true coonass from Louisiana and had made a duck gumbo. Smelled good so I filled the bowl up and started chowing down. It tasted very good , was hot/spicy, but I kept eating bites of something kind of spongy and chewy. I finally asked ole boy what it was and he, "Damn boi, you got the prize!"
    Me: Ah....do what?
    Coonass: "The prize...the duck parts!"
    Me: Ah....do what?
    Coonass: "The duck heart, gizzard, and guts! Cajun legend says who ever gets it has a great hunt the next day! You got to finish the bowl though."

    Needless to say I lost my appetite after he told me because I wasn't expecting it. Didn't want to be rude and not eat anymore so just slowed down...he noticed and said if you aint gonna finish it I will. I gladly passed it his way and he knocked it out, he even used my spoon.

    True story.
