Butter, diced onion and potato - cook until potatoes are done.
Add condensed milk and regular milk at 3:1 ratio (warmed in separate pot to prevent curdling)
Add more butter
Add cream of mushroom (one can per onion)
Bring to boil
Add oysters (with oyster juice in container)
Add Salt & pepper & more butter. Determine amounts by taste.
Turn heat to low and cook for 30min.

Oddly the closest we have in the cookbook are JimBob's Shrimp Stew and Nitro's Oyster Gumbo...
Too many recipes and variations on Oyster stew to pick out a favorite for me. I will happily and enthusiastically eat any put in front of me. A friend who makes some damn fine stew says putting potatoes in an Oyster stew makes chowder.
I like the briniest oysters I can find ( which usually means cold water mollusks from the NE or PNW. )..Oysters, all the liquor, lots of black pepper. Butter. Whole milk. 1 cup of Cream. Chopped onions. Cook on medium heat until the oysters curl on the edges.
I have had it with crumbled saltines in it and it was good. Some of the snobs I run with like the little Oyster crackers in theirs. A few shakes of Crystal Hot sauce in the bowl is a must.

Pan roast oyster
Serve 4-6
4 cups 36percent cream
5 tablespoons chili sauce
1/2 teaspoon Tabasco
1 tablespoon celery seed
2 tablespoon old bay
1/4 teaspoon cayenne
1/2 teaspoon paprika
1 teaspoon Worcestershire sauce
Pint “BLUFFTON OYSTERS”
Mix all ingredients except for oysters in a med saucepan and mix well. Pink color.
Bring mixture to a boil, stirring occasionally to avoid burning. Last toss in oysters. Cook 1 minute or until desired oyster texture is reached.
