I do not overcook my ducks.
I hate any red meat that's done to death. Divers and mud eaters get the shephards pie treatment, and Sprigdog turned me on to weejun bowls. Any duck with white fat they get the grill. Yellow or no fat...see below.
If I have a fish smell on my hands for a few days after cleaning one I'm it's not getting spatchcocked on the grill cooked to a lucious mid rare.
