    Default Frying or Smokin for Thanksgiving

    I do one of each, Texas style smoked turkey and cajun fried turkey

    Also will fry couple others for my Secretary and her family

    I will be glued like a Blue Heron on a riverbank, watching my Mom bake this turkey as they have for more generations than honkies hit the beach. I have to get this right...

    Traditional roasted turkey for the family dinner. I’m also frying a smaller bird for the boys; they each get half a bird to take home as leftovers.

    Big easy Turkey and a lot of grilled and smoked doves and a back strap some how. Who’s got a good back strap recipe to try.

    Any pointers on frying would be much appreciated as this’ll be my first go round. This is the first year my mother is unable and I was delegated the task of the turkey.

    Make sure you have the correct amount of oil in the pot.

    And more importantly make sure the bird is thawed and dried. Water in the hot oil is going to make you wish you had a back up plan.
