Ratatouille is good & hearty; but sort of a cool weather meal, nice with a crusty French bread.
Fried is great, but like Justin said, you've got to "sweat" the veggies. I sprinkle with sea salt/chef grind [fat pepper] & then layer between damp paper towels for about an hour, before breading & frying.
Eggplant Parmesan is good. Grilled Eggplant Parmesan is better!
Eggplant Bruschette is amazing!
My favorite & easiest way to cook eggplant: On the grill, in what I call a "Hobo Pack": chopped, chunked veggies of whatever you like (I usually use eggplant, tomato, vidalias, squash, zucchini, etc) + garlic, mushrooms, sea salt, pepper & drizzled with olive oil. Seal it all up in heavy duty foil, chunk on the grill & flip it over every once in awhile.
