Look up SC Association of Taxidermy. They might be able to help. Offer to help a local taxidermist. If they are good at what they do they can probably use the help and will be willing to train you. There's more work than most can handle anyway.
I saw a fella from OOS recently offering duck taxi training $2500 here in SC. Lil too steep for most hobbyists.

I'm more interested in tanning hides than actual taxidermy but I wouldn't mind learning a little taxidermy as well

Lots of cool tutorials online. I worked for a taxidermist back in my 20's. Handled mounting more deer heads than anything else. We shipped all our hides to be tanned. Coolest one I skinned and prepped was a 13' python that we euthanized in a chest freezer, the finished hide was beautiful.

Most taxis ship their hides for tanning i would venture to guess. The guy I used to help out some did anyway.
