    Wrap the bamboo roller in Saran wrap for easier clean up. Rice vinegar and sugar warmed up to mix in with the rice.

    Mixed white and black sesame seeds for better esthetics. If you go to North Charleston Asian market can get all the rolling supplies and gear you need. Nice chopsticks etc.

    I like the rice molds for nigiri.

    Eat a lot of tuna and wahoo sushi. One buddy swears by sheephead.

    I used to do it all the time in the 90’s. The guy who owned Waccamaw Seafood in Columbia would call me when he got some primo tuna in. Japanese rice is the only way to go, I think it’s also called pearl rice. We didn’t have the internet back then so I had to ask a Japanese lady for help. I had been trying regular long grain rice prepared like always and quickly realized it sucked. Get the correct rice and rinse it until the water is clear then do it again. Damnit, now I’m hungry.
