    I have gas. I think it was the chili but I also have a gas range. I dont turn it much past halfway to cook damn near anything. and if you have "non stick cookware" and you turn it to high you will lose the non stickness.....
    ...kind of like companies advertising the 0-60mph times for sports cars. It is a demonstration of capability, not what is used every day, all day. Having said that I have spent too much time waiting for water boil. Here are the things I like most about my induction:

    1. the cooktop remains cool
    2. The cooktop remains clean; in fact, you can actually put a paper towel under your pots while cooking. Then, if it splatters, just throw the towel away. However, because it does not get hot, things do not stick even if you do not use a paper towel.
    3. It will hold a temperature indefinitely
    4. Gets to its temperature quickly and not just for boiled water. So if I know I cook eggs at a certain temp or setting, I set it and in seconds it is at that temp
    5. The pot is the element, so it does not heat the house up when cooking and only uses energy enough for that pot or pan. 12" skillet uses more energy than a 8" even at the same setting.
    6. Last and perhaps most curious, the element turns off if a pot is not present. Great for the OCD people and even better for those who have put down a plastic bowl on a cooktop and melted it. In fact, I have a silicone mat that goes over my top to protect the glass from drops. As soon as I take a pot off, I roll the mat over the top.

    Ever worry about burning your oil while you are frying chicken or fish? Just set the temp at the high temp for the oil you are using and forget about it. MG

    so its some sort of voodoo magic? i'll admit i was wondering how you keep the stovetop clean. I'll try the napkin trick at home and report back.

    Important things.

    Induction stove tops run on electricity. There is a EPIC DIFFERENCE between household ones that split the same power feed circuit and commercial ones with independent circuits. Huge. Like wow.

    When shopping for them it is important to know how these units are wired. Power supply halved between the two burners you want or actually use sucks. Full power burners are awesome.

    Running new power feeds sucks. Wire is expensive.

    I'd hate to know how much a new wire big enough to run that thing would be. I could probably buy 3-4 new gas stoves by the time I paid an electrician to come set it up.

    Mine runs on the same 240V dedicated circuit that the previous range/oven combo did. These use far less power than standard electric ranges, which is why they are in RVs and Yachts. I know some people that are converting from gas to induction complain about wiring but if you are going from electric to electric, there are no issues. MG

    We use the induction for water and rice/Mac and cheese/ noodles anything like that.

    I typically use the gas for everything else. It's a two burner griddle looking thing on the side of my range.

    I actually haven't tried to cook any protein on it.

    Most of the time I am cooking protein outside though.
