We scale 'em, cut the heads, gut, and fry whole. Depending on the size I know plenty of folks that filet them. Too much work for me though.

We had someone that wanted these. We fry whole and filet, just depends on the occasion. Neither are hard to do.

[Palmetto Bug]

Even if you don't want to completely fillet a bream, cut out the dorsal and anal fins. That gets rid of a bunch of bones and opens them up so the fry up way better.

Pro Late round 5

Coast to Coast 2 different tracks. One a ghost town; one almost a ghost town.

One less car at the track for us as the Hamke still has the front clip knocked off. (still looking into a back-up car option) So just the Pathfinders this weekend.
Short track Pro at the track Fri night testing his own house cars. Gave us some setup tips and we are on our way for the weekend.

Made the qualifying redraw. Drew a 9. Went green the whole race finished 7th nose to tail with 3-7. Cars in one piece loaded up fine. It's a win.

Sad realization that you'll always make more money working on race cars then driving race cars...

Sadly the ghost town track is Greenville Pickens.

The soon to be ghost town is Madera Speedway.

Next up on the schedule is the little bullring a couple hours north of us, for the 4th of July special. (the place is notorious for eating up a body)
