What happens with all the meat?

If it's like most places in South Africa, they serve some of the meat at the lodge, some is donated, some is sold to companies that make biltong/jerky, or used for bait if they have a leopard or croc hunt. Every operation I've ever seen does something with the meat, it's not wasted.
