I wish I could help, but I’ve only had the experience of carrying one less than an hour home and doing a fan mount myself. I can only assume to take the same measure as you would with waterfowl, with the exceptions of not having to worry with as much care of the head?
I know we have some jam up taxidermy folks in here that will help out. HEAD, where you at with that squatch beard?

I shipped one from SC to TN on a Greyhound at th taxidermists insistence. Worked beautifully.
Look at YouTube...there are videos on there showing how to dress a bird for the taxi. It's not difficult, because I've done it successfully twice...so anyone can. You can get your breast meat out easily without hurting the mount,

Maybe Fowl Mouth will come along and give you some advice. He's pretty good at bringing those things back to life.
Nothing really that complex about it. Kill turkey, put a ziploc bag or paper towels over head and tuck under wing. Get a couple of pieces of cardboard to sandwich his tail feathers and tape or zip tie. Freeze for a day or two if you can. Put in a box and ship to your taxidermist 2 day UPS. It should still be cold when it gets there so they can immediately start caping.
