Reciprocating saw. Make sure to find the studs 1st. Measure twice, cut once.
A somewhat jagged cut will be covered up when installing finishing trim. I'd use a square, though, and trace it out with a Sharpie. (And goggles.)
Also ensure there are no wires where you will be cutting.
If not 100% sure, turn off the power before cutting.
The "attic stairs in a box" have pretty much everything you need to complete the job.

Drywall or plaster ceilings? Joists 2X6? Conventional frame or trusses? Joist spacing?
If drywall, draw out opening and cut with a utility knife or multi-tool. Cut as much of the joist as possible with a circular saw. Finish with a reciprocating saw. Header off cut ends, frame sides in. Apply trim so that it over hangs openings 3/4” around. Cut a piece of plywood and attach some rigid insulation to the back for a cover.
Don’t hack the opening out with a saws all. Damn bunch of wood butchers.
Yeah, but do you consider a dog to be a filthy animal? I wouldn't go so far as to call a dog filthy but they're definitely dirty. But, a dog's got personality. Personality goes a long way.

50 year old house probably won't have plaster but it may have asbestos in the sheetrock. Go in the attic and pull back some insulation if you see Kaiser proceed with caution.
