I used to eat that stuff when I was getting rid of a few pounds. The only way I eat it now is fried, with copious amounts of Zax or Chic fil a sauce. However, for lunch today, I made some nachos out of some shredded chicken quesadillas the Mexican joint accidentally put in our take out order last night. They were pretty spot on with some queso, onions, salsa, and #@&%&W.

Let me add this, should have to start with
Wife is diabetic and while my blood sugar is fine it does creep up around 100 so I try and not many carbs at all . So when you take breading and frying out of chicken it really gets tough
Still some good ideas on here. I do agree with pounding crap out of it, seems to help the skinless boneless breast to cook better
Most of time I prefer Blackstone over grill, that way I can keep it from drying out

My wife much prefers boneless, skinless breasts also. When I cook it for her, I cover it with Kraft squirt butter and hit it with Cavenders Greek Seasoning and a little lemon pepper(both sides). Throw it on the BGE with a little hickory for smoke and cook it to 165 internal. She absolutely loves it.

Not a bad idea, wife loves to make stuff like that and we both love chicken salad . For those of yall my age or older there use to be an old store in downtown Anderson right beside Little Pigs. Yon’s. Had great meats and their chicken salad was out of this world , pimento cheese was great too. Best steaks in town at the time I may put wife on a mission after Christmas to see if she can whip some up
Even with my lack of taste buds that gets old in a hurry .
