I once ate a $126 22oz aged porter house at 3:30am from room service at the Mirage. I have no idea if it was good or not. Found the plate on floor around 1:00 pm the next day and had no recollection until the bill showed up at checkout.
For steak, I've been to Gallagher's in Vegas, The Palm in NYC, and The Steakhouse in Circus Circus beat them all. Yeah, I said it. It is old school steak house with dark furniture and leather everywhere. You have to walk past the grill to get to your table. Been a few years since we ate there, but I'd go back tomorrow.
Joe's Stone Crab at Caesar's is damn good. Gordon Ramsay's in Paris was good as well. Had the beef wellington there and it was phenomenal.
Off the strip, we went to Nora's Italian last year and it was spot on. It's about a half mile past the Palms on the right, if I remember correctly.
IMO, Vegas' only redeeming quality is the food - just like New Orleans.
