Leave the potatoes out...but if you have to have them, cook'em separate. Otherwise they starch everything up.

Well, to be fair, I'm actually from the upstate, so my friends called it a lowcountry boil. I've always done them with small red potatoes, but I've seen and eaten them all kinds of ways. I'm up here visiting my sister and mother. My BIL is military, and stationed up here. They really aren't yanks, and will hopefully come back home soon.
The boil was great. Thanks for all the good advice.

More fuel = more boost!!
I may be alone, but the idea of mussels in my low country boil actually doesn't sound that bad. I've had it with partially cleaned blue crabs (lower halves) and it was spot the hell on.

I hunt with some guys that will having the sausage at a roaring boil before we make the first drive, it's damn near a sponge by lunch. It drives me crazy and I refuse to cook it on my cook day. They make a 1/2 hour meal into a half day. They are southern as one can get, but skipped that day on how to cook FMS.
If you give 10 people a bag of gold, someone will complain about how heavy it is!
3/4 of them want there steaks well done cooked on a hog cooker too. I don't cook steaks either on my cook days.
