Tried something different this weekend. Made some tacos al pastor. Basically thinly sliced pork shoulder, about a 1/4" thick stacked on top of pineapple.

Marinade you can buy at some grocery stores apparently but I made most of it from scratch. My recipe,

• 1/2 white onion
• 1 tbsp brown sugar
• 4 cloves garlic
• 1 tbsp cumin
• 1 tsp ground all spice
• 1 can chipotles in adobe sauce
• 1/2 cup Olive oil
• 1/2 cup vinager
• 1/4 orange juice (can use pineapple juice)
• 10 guajillo and 2 ancho peppers rehydrated
• salt to taste (1 tbsp sea salt is what I ended up with
• 10 lb pork shoulder

Mixed all ingredients besides pork in the food processor until smooth.

To rehydrate the peppers I browned the dried peppers in a pan until smoking and then de seeded and de stemed. Added back to pan and covered in water. Brought to a simmer for five minutes or until soft.

Slathered marinade over each slice of pork butt. Let sit overnight in the fridge and then assembled on homemade shawarma (Walmart paper towel holder with the top cut at an angle) with a slice of pineapple on the top and bottom.

Put on the drum smoker at about 375 for 4 hours or until probe said 165. Started spraying with apple juice when the exterior started to crisp up. Rested for a short period while I prepped the onion, salsa, cheese, cilantro, and pineapple.

Kids and wife loved it. Definitely will make again.
