    Hot and fast, over hardwood coals and a cast iron grate if you can, sliced as think as you can get it, against the grain, a shot of tequila before each if you decide to put them in a tortilla, home made salsa, include a pepper with some heat in it.

    Hard to beat. If you want a variation, and have a little more time, caramelize the onions, add goat cheese and make quesadillas. Reduce some balsamic into a syrup and drizzle the quesadilla, it's killer.
