    That's priceless!!! I knew it had to be abalone or geoduck based on your hints about Sprigdog, California, and an un-fancy animal! I used to love diving for abalone up on the Mendocino coast!!

    Evan will be thrilled since I still have this one of his in the freezer to send to Shane!

    Living in Moncks Corner but looking forward to moving back to the West Coast in 2020 where there are more ducks and less duck hunters!! LOL

    Great pic!

    Since my friend, who scducks Member "Bear" hunted with, Paul Gery told me about mounting Abalone, I have wondered WHY? After seeing the California Gamewarden show, I see that they take those things serious out there.

    Tell us a little bit about them if you don't mind RK. Taste like oysters? Etc...

    Abalone are a blast to catch. They live along the rocky bottoms off the coast of Cali, Oregon, and Washington. We always free dives for them which made it interesting when trying to swim through the kelp forests. The trick to them is prying them off the rock on the quickly on the first try so that they don't suction down to the rocks! They are highly regulated so going with someone that knows the gig is the best way to stay out of trouble.

    They are absolutely delicious but its very dependent on how it's prepared. The meat is VERY tough and needs to be tenderized thoroughly with a mallet. My uncle always fried them up but I'm sure there's a million ways to prepare them. I can tell you that as sushi they are one of the few things I won't eat!!! I paid $22 for two pieces of nigiri and it was absolutely awful! It was like trying to chew through some fresh cartiledge! You would bite down and after exerting enough pressure your teeth would break through the meat. The feel and sound was terrible!!


    This recipe is similar to how we prepared them:

    readed Abalone Steaks
    Ingredients (serves 2)
    • 1 abalone
    • 1/4 cup flour
    • 2eggs
    • dash of dry sherry
    • 2 tubes of Ritz Crackers
    • 1 teaspoon freshly ground black pepper
    • dash of white pepper
    • olive oil
    • roll of paper towels
    Preparation
    • Grind Ritz Crackers with black and white pepper into fine crumbs.
    • Place cracker crumbs and flour in separate shallow bowls.
    • Blend eggs and sherry in shallow bowl.
    • Layer 4 or 5 paper towels on a serving dish.
    Prepare Abalone Steaks
    • Slice abalone into thin (1/8” to 1/4”) steaks.
    • Bread the abalone steaks:
    a. Coat both sides of one abalone steak with flour.
    b. Dip the floured abalone steak in egg mixture.
    c. Coat the egg dipped abalone steak with cracker crumbs.
    d. Put aside and repeat the process from a. for the remaining steaks.
    • Chill the breaded steaks.
    An old Weiner schnitzel preparation trick works with this breaded abalone recipe. After breading the steaks, let them chill in the refrigerator for an hour or two. This step helps prevent the breading from falling off the steaks during cooking.
    3. Add olive oil until there is approximately 1/2 cup in the pan.
    4. Wait until the oil is hot.
    5. Add 2 to 3 abalone steaks to the hot oil.
    6. Cook on one side approximately 30 seconds.
    7. Turn abalone steaks gently.
    8. Cook for another 20 seconds.
    9. Remove abalone steaks to the serving dish.
    10. Cover abalone steaks with 2 or 3 paper towels.
    11. Repeat from step 2 for the remaining abalone steaks.
    12. Serve hot and enjoy
