Anybody got a recipe?
I bought a bag from the Mennonite place in Barnwell and was shocked at how good they were. They are worth a shot.
Are they like those okra chips? Look like okra, taste like okra, texture of a pork rind?

Or do you just throw them in the dehydrator and then season them later?
Our local Piggly Wiggly just started selling them. I thought they were fried, not dried. All I know is they are delicious but too expensive.
You can get them from the Fresh Market as well, but you're right... too expensive.

My parents got me some whole ones from Trader Joes.
I don't think they were dehydrated, though; they seemed a bit too oily for that. Maybe flash-fried?

I haven't done it but you might want to try this recipe for veggie crisps. You can just substitute Okra for the other veggies. It ought to get the job done, and the cayenne will give them a little kick. Those okra you're talking about are ridiculously overpriced, and this can be done rather quickly and much cheaper.
1 sweet potato, peeled and thinly sliced
1 zuchinni, thinly sliced
1 summer squash, thinly sliced
1 jicama, peeled and thinly sliced
kosher salt, or sea salt
2T olive oil
1/4t paprika
1/4t cayenne
ground pepper to taste
Heat oven to 300*F. Line a rimmed bake sheet with parchment, and set a metal cooling rack over it. Arrange the veggies in a single layer on several layers of paper towel. Sprinkle them lightly with salt and let them sit for 20-30min. Pat veggies dry with additional paper towels. Arrange the veggies in single layer on cooling rack. In a small bowl, whisk together the oil, paprika,cayanne and a bit of salt and pepper. Brush mixture over veggies and bake for 30 min, or un till they are crispy. Season with salt and pepper if desired.
Aight. So I dehydrated some okry and it wasn't bad. Here's what I dun did.
I did a few whole, caps and all. I cut the caps off a few. I cut the caps off a few and then sliced them in half lengthwise. I cut up some like I was going to fry it, in little rings.
I salted all of them.
Then I dehydrated them.
I liked the whole, caps off ones and the fry cut ones the best. Crispy, crunchy and good.
