My other boat is a 23' Contender w/ twin 200 HPDI's so I'm familiar w/ having more power than you need.
I'm not looking for speed w/ this rig. That being said, I'm really leaning towards a 60 Merc. Also, MI Tide is building me a side console (going to pick it up in G-town tomorrow) so a tiller is no longer necessary.

Not hard at all.
X3 on missing the tiller. Those boats are not big enough to justify losing that chunk of deck. Also lost is the ability to turn on a dime.
Also, I have never run one with a 40. Only 60's and 90's. They are very weight sensitive in the transom, so compare the weight of a 40 over a 60. If it is fractional, I urge the 60..
Speaking of 60's beware the merc 60's. The top cylinder has a habit of blowing due to it distance to the water pump. If you have a build up of trash in the water jacket, it is just a matter of time before it overheats.

The front bench & livewell are likely to go.
that wouldn't be a bad setup in my opinion especially for long rides on big water or for the creeks down at the coast

I'm thinking about adding a rear deck from the transom to the rear bench, effectively creating a flats boat & adding a ton of dry storage. I'm also putting a 12 gallon gas tank under the front deck, which should help improve the ride.
I am just trying to help here, so take it for what it is worth...
With the cut transom, a heavy motor, a battery and a big ass in the aft end, you will need to be very conscious of what materials you use to create your flat's boat.
As stated, those things are heavy in the transom. They really could use another 6-10" in beam...
