    My first paleo meal. Squash, mushrooms, roasted chicken, zucchini, and spinach.



    And dessert. Apricot nut bars.

    There's no doubt that you can find all sorts of things to eat that are OK. And the above looks great. Where'd you find the recipe for the apricot bars?

    Where I've had problems is with traveling and simply not taking the effort to get the restaurant to make amends to give me what I should eat. Glenn will tell you that most places will accommodate your requests - and they will. In my case, I just have to make the effort.

    1/2 cup raw almonds
    1 cup pecans
    1/4 teaspoon sea salt

    Crush in food processor and put in bowl. Not fine but not too chunky

    12 dates ( I used more like 20)
    1 cup dried apricots

    Blend in food processor ( will be a ball of goo)

    Mix with nut mixture.

    In a pan spread some coconut oil in the bottom and add the mixture. Flatten it out and then cut into bars.

    Not bad. Better than some of the premade stuff.

    I think I got it from everydaypaleo.com and they had other nut bars and stuff too.

    Meal for tonight. Squash, zucchini, and onions with sweet potato and lemon pepper salmon with pineapple/mango topping.

    Hell yeah man. If you can eat paleo at Ike's, you can eat paleo anywhere. And I mean ANYWHERE!

    I sawr it with mine own eyes. I was almost paleo myself for that one - but let the onion rangs spoil it for me. But damn they were good.

    Went all paleo at the waffle house last night and ordered directly off the menu to boot.....2 hb steaks, 2 eggs over light and sliced maters......bottom left hand side of the menu
