    Default cook my quail

    got about 10 whole birds. legs attached. i normally would fry and make a gravybut would prefer something i can make in oven that is a little better for the family. my daughter loves "baby chickens."

    so...aside from the usual cream of something soup and some of the trinity (onion, bell pepper, celery), what could i make?

    maybe some cheese and crumbled ritz on top? i know foie gras and fish will tell me to make something else, but what say ye normal people?

    would like to serve with wild rice and a salad or something along those lines.

    and damn the price of fruit. my kids ate $6 worth of strawberries and most of a $5 pineapple at supper tonight. and yes that is off topic.

    Olive earl rub and grid sea salt, maybe some basil, some oregano and pepper.

    Bake them covered most of the way then uncover to brown 'em a bit.

    Split 'em at the back and lay them on your rice.

    Put garlic. Ginger. Salt. Pepper then the last 10 min mix up vidalia onion peach hot sauce an apple jelly an based and cook ten more min. An eat.

    Marinade just a bit in your favorite. Lightly salt, garlic & pepper and grill but don't over do it. I sear them real quick and then move them to the top grill on low for just over 5 minutes.

    Beer helps.

    By the way, for the times you don't hunt, has anyone noticed that Manchester has an outlet store on Garner's Ferry just this side of Pinewood Country Club on the north side of the road?

    So does Bunky. Makes for a great meal when all else is gone. Bunky has rabbits too.

    And bulk liver pudding that is great. Lil rp eats the hell out of that stuff and we still can't put weight on his scrawney ass.

    Fresh Garlic cloves, CRUSHED, Olive oil basil and a little balsamic vinegar, marinate overnight. Grill. Trust Me. Little basil and parsley also.

    This stove-top/skillet & 4 quail, but you could adapt it for the oven & double the recipe + apples are cheap:

    QUAIL CABBAGE ROLLS

    4 quail, dressed
    Salt & pepper
    4 cups cabbage, finely shredded
    4 slices bacon, cooked crisp & crumbled
    8 large cabbage leaves
    2 tbsp butter
    1 cup chicken broth
    2 large Granny Smith apples, cored & diced
    ¼ tsp dried thyme
    ¼ tsp dried tarragon
    ¼ tsp caraway seeds

    Lightly salt & pepper quail. Combine shredded cabbage & bacon; stuff ¼ of the mixture in cavity of each bird. Wrap each quail in cabbage leaves, (using as many leaves as needed per bird). Tie with string. Lay bird rolls in a large skillet on top of stove.

    In saucepan, combine remaining ingredients & simmer for 5 minutes. Pour over bird rolls; bring contents to boil. Reduce heat, cover & simmer 25-30 minutes until tender. Remove string & cabbage leaves. Serve with juices from skillet.

    You really don't need to do much to quail, imo.....like the man that has a set of nads hanging on his finger says....

    Kind of like a good cut of beef...pepper, garlic, unseasoned tenderizer, only after rubbed with olive oil.
