    Default crab cakes

    the bream cakes got me to thinking....

    and my wife just got back from the beach with a "snack bag" full of picked blue crabs. my preferred way of eating them is to use a fork.

    but, i was thinking its crab cake time. I reckon i have enough meat to make 4 cakes. what's in em?

    Take my bream cake recipe and substitute crab for bream. I think I forgot to list lemon juice in the ingredients.

    Be proactive about improving public waterfowl habitat in South Carolina. It's not going to happen by itself, and our help is needed. We have the potential to winter thousands of waterfowl on public grounds if we fight for it.

    1lb crab meat
    1-2 roasted red bell peppers(diced)
    2 stalks celery(diced)
    2 shallots(minced)
    4-5 basil leaves(chiffonade)
    2-3 tbls Duke's mayo
    1/4 cup panko
    Sriracha To Taste
    Kosher Salt and Fresh Cracked Pepper

    Sweat celery and shallots in a little butter until translucent. Drain on a paper towel and cool. Mix all together and season. Add panko if its too loose, mayo if its too tight. Dip in flour, egg wash, and more panko or mashed potato buds and saute until golden brown. This makes great crab dip too, just leave the panko out.

    BTW, Sriracha is an Asian chili sauce and the best condiment in all the world. Its quite hot though so tasting as you go is a must.

    Pap, here's a more detailed version of the recipe. On the link above, I wasn't very specific.

    Meat from 4 cooked medium bream,
    1/3 onion-chopped,
    2 ribs celery-chopped,
    Tony Cachere,
    1/4 cup mayo,
    1 egg,
    and breadcrumbs from toasted John Derst's bread.You can substitute 1/2 sleeve of crushed ritz crackers.
    a squeeze of lemon juice,
    1/2 teaspoon mustard powder,
    a dash of worstershire sauce.
    Hot sauce if you want to.

    Mix everything except the fish and breadcrumbs. Then fold in the fish. Then add the breadcrumbs - just enough so that the mix sticks together. Fry in 1/2 inch hot oil.
