    Default vension jerky and snack sticks recipe?

    anyone have any recipes for making jerky or snack sticks out of ground meat? i dont have a smoker, only a small dehydrater.... i would like to be able to cook it in the oven....

    not really looking for the store bought seasoning mix but will try it if push comes to shove.....

    I use cajun seasoning mostly but have also used cavenders greek seasoning with fresh cracked black pepper and it turned out very good

    ive got the best recipe on earth for regular sliced meat jerky.... but my big question is how to make it with ground meat.... big problem is all the stuff i marinade my regular jerky in is mostly liquid.... but with ground meat you cant use as much liquid seasoning, because it will make the meat too diluted....... hmmmmmmmm

    Here's the best that I have found - Enjoy. I'm about to make a batch of this up.

    Ingredients:

    • 8 oz. La Choy Soy Sauce
    • 4 oz. liquid smoke
    • 4 oz. brown sugar
    • 1 ½ oz. liquid crab boil
    • 2 oz. Worchester sauce
    • 1 oz. hot & spicy creole seasoning (Zatarains or Tony Chachere’s)
    • ½ oz. salt
    • 1 oz. hot sauce (Tobasco or other)
    • 1 or 2 oz. red pepper (I don’t usually put this in – makes it too hot)
    • 3 lbs. thinly sliced rump roast with no excess fat

    Optional: 2 oz. chopped Jalepeno peppers and its juice (I do usually put this in)

    Directions:

    Mix all ingredients and let it marinate for at least 2-3 hours (I usually marinate at least 8 hours). Then place in dehydrator for 12 hours or more (length of time depends on meat thickness and desired level of chewiness vs. brittleness).

    HERE IS MY SLICED MEAT RECIPE...

    Cut Your Meat Up,
    Let Is Marinade Overnight In The Following,

    Soy Sauce,
    Brown Sugar (be Generous)
    A Dab Of Worchestershire Sauce
    Black Pepper
    Garlic Salt
    Red Pepper (to Taste)
    And Peprika (lightly)

    If You Like Teriyaki, Add Teriyaki Sause And Use Less Soy Sauce.

    Then Put It In Your Dehydrator....


    ITS LIKE PRINGLES... I BET YOU CANT EAT JUST ONE PIECE!

    I have a dry ingredient recipe I use to make jerky from cut meat and burger. I use a dehydrator. I'll post it up when I get home.

    5lbs venison
    1/4 c chili powder
    2 tbsp onion powder
    2 tbsp paprika
    1 tsp black pepper
    2 tsp salt

    Mix it all up and dry it in the dehydrator or smoker. I roll my burger out with a rolling pin to about 1/4" think and score it with a pizza cutter so it breaks into convenient sizes.

    Oh yea, and an optional 1/2 tsp of cayenne for heat if you like spicy.

    how do you make it in the oven, and a little more info on making jerky out of hamburger, since i have alot of burger as of now

    I made jerky for the first time today out of some deer from this year. Just tried it and it is WAY too salty. I used a commercial spice pack that came with my dehydrator and only marinated the meat for about 6 hours. Any way to fix it so as not to have to throw out all this meat?
