i want a couple of knives like that
I asked the proprietor of the sushi joint I frequent if he'd sharpen my knife for me one time. You DON'T want to make that mistake. They lay their knives almost flat to sharpen them. It took me hours with a lansky to get it back to being able to skin a deer again.
Practice, practice, practice. Most people aren't "afforded the opportunity" to clean as many fish as those guys, so they will never be that good. Theres alot to be said for sharp knives though.

I've cleaned a catfish or two in my time but thats just damn good. got a buddy that skins all his deer with a filet knife and have seen many others do the same.
i dont want to ever get that good at cleaning fish now that i think about... cuz that means that i would have had to clean a whole bunch of fish... and i hate cleaning fish...so im fine with beening pretty good at cleaning fish instead of beind damn good
Gotta respect the ninja skills!!!!

I believe this video was taken in Murrells Inlet at what was Capt Dick's Marina in front of the Instigator, Jamie Moore's boat.
The guy in the first video was faster... the guy in Fish's had what appeared to me to less waste.
