    Default Mahi and Tuna

    Had a client give us some mahi and Tuna steaks and need some recipe suggestions. My partner mentioned something about a pistachio sauce for grilled mahi but cannot remember a recipe. I like grilled fish but if you give me anything too complicated or that has too many fucking ingredients I'm gonna batter the shit and fry it. Keep it simple for me.

    Foy grass? Bull Cook? Toof you stay out of it.

    Simple and easy.
    Get some greek seasoning. Rub it into the meat. Lightly coat with olive oil. Sear that tuna good on each side-Medium rare. Eat it.

    Works on the dolphin also, but I tend to cook the dolphin to Medium.

    thats how i do it slaya... but i melt some parmesan cheese on it while its on the grill... ummmmm that sounds good

    That does sound good. Might have to try it your way next time.

    My cousin cook some with a light coating of Mayo instead of Olive Oil. It was good also. And the leftovers were already on the way to being tuna salad.

    i dont know how to cook, but i do know how to grill.

    tuna, lightly seared, little peppercorn..call it good.

    dolphin, grill, brush butter/olive oil on. serve with fresh store bought mango salsa over the top.

    man, dolphin is good anyway you want it, half the time I just marinade it in italian dressing and grill it, hitting it with fresh lemon juice the whole time. I trim my dolphin steaks and using the little pieces to make dolphin bites, panfried in butter, amazing

    Cavenders is good on the mahi. I like to put BBQ seasoning on the tuna steaks and the grill good and hot and hit it on each side for 20 seconds. Good eats.

    tuna + wasabi crust + hot grill x 1 min per side = yummy. damn sure better be raw in the middle or you did it a disservice. dash a little soy sauce on there and eat it.

    dolphin + lemon pepper + grill = yummy2. you cant screw that one up.

    who needs a damn recipe to grill a fish?

    answer: someone who needs containers to grow tomatoes.

    get pan warming on its way to red hot. Cut steaks into square shaped rolls. Cover bottom of plate with garlic powder, as many types of pepper as you got, a touch of lemon juice, and Tony Chacheries. roll fish in pepper mix, throw in pan with butter/peanut oil and allow each of 4 sides to sizzle for about 5 seconds. Remove, wipe out burnt oil/butter, and repeat. Slice and eat immediately. Should still be cold and raw in center and white aboit a 8th to a 16th of an inch deep.

    #1 I took too many food born illness classes to eat raw fish. Warm in the middle, maybe. But raw, fuck 'dat.

    Tuna:
    Season with kosher salt and cumin. Sear in olive oil in a hot pan(375-400) on all sides until desired doneness(I recommend rare to mid rare) slice thinly and serve with cucumber and mango salsa

    Cucumber mango salsa:
    1 diced english(seedless cucumber)
    1 diced mango
    1 tbls chives
    2 tsp extra virgin olive oil
    1 tbls sweet chili sauce(asain section of grocery store)
    salt(to taste)

    Dolphin:
    Prepare a batter of 2 eggs, 3 or 4 leaves of basil(sliced thinly, lenghthwise) and lots of fresh grated parmesan cheese, at least a cup, more if you like. Season fish with salt and white pepper, lightly coat with AP flour and dip in the batter, make sure you get some of the basil on the fish. Cook in a pan with olive oil over med high heat until firm, the egg and cheese will brown, don't worry about it. You can cover it to speed cooking if you have thick filets. This works best with filets less than an inch in thickness. Serve with White Wine Sauce

    Sauce:
    Brown about a half of a stick of butter in a sauce pan over high heat, add a half cup of white wine(I like piont grigo for this) reduce by 3/4. Remove from heat and slowly swirl in the other half of the stick of butter(sliced) the sauce thins slightly. Add halved cherry tomatoes, capers, salt, and a squeeze of lemon. Serve immediatly, as this sauce will break if it gets cold.

    All measurments are approximate so feel free to adjust as you see fit.

    Let me just clear the air here a bit. I'm good with the above method of preparing said fish; not a lot of polish on me. I guess what I should have mentioned is that my partner was also the recipient of some of these fillets and wanted some different recipes.

    Now, I would expect such comments from someone whose idea of a fancy night out means using a fork for the sardines vs. diggin' 'em out with their fingers and who cannot see the benefit of buying special made plastic boxes for the advanced growing of tomatoes.

    In other words, I consider the source.

    Mayo-parmesan crusted grilled dolphin fillets are the shiz-nit...

    Y'all better axe somebody, 'fo real!

    Dolphin is probably one of the better fried fishes, too.
    Soak in texas pete, dredge in house-autry, bathe in hot oil.

    On the dolphin: Get a whole tomatoe, skin and simmer it till it becomes mush with garlic and a little parmesan cheeze. Get grill hot - rub fish down with fresh ground pepper then brush with sause -- cook for 5 minutes on each side - then eat.

    Goes great with grilled veggies - squash, acorn squash, shitake mushrooms, any pepper.

    Fresh tuna you eat raw with wasabi, Japanese rice and roll in weed.
