Is there any reason why I can't use multiple shims simultaneously?

I believe each shim has a specific purpose. Cast off, cast on, drop. Put both for cast off and cast on and you are right back where you started.

Those are spacers. Should be fine.
Shims are inside the buttstock. Small metal plates that fit on the rod coming out of the receiver. They will be numbered, I think beretta’s are 45, 50, 55 & 60, something to that effect.

Yup, he's crazy...
