    Default Duck Gumbo

    Took some birds and made a gumbo today. I make good gumbo, it's my thing.

    With you being a professional, what are your thoughts on the bell peppers in that particular dish? Growing up in La, I heard Justin Wilson refer to bell peppers in gumbo as "taste killers". I like bell peppers a lot but am curious about your thoughts on how well they fit in with your gumbo.

    I think Justin Wilson had a strong opinion that that strayed from the norm. I've never heard that.

    Honestly the sausage was a bit of a let down. It was some andouilli sausage from the grocery store. Some Texas Smokehouse bs. I couldn't remember between that one in another one that I'd used before. I chose poorly. It was still very very damn good though.

    I’ve used Texas Roadhouse and it’s been great. I have also used it and it’s been flavorless.

    Question on the sausage. Do you sauté the sausage prior to putting it in the pot? Or, simply slice and add to the trinity after it has cooked in the roux?

    I brown it in a skillet and transfer it over. I do it to cut down on the grease.

    Looks great WillK!!

    Only Andouille I use in Gumbo is one of 3 brands. All have proven worthy.

    Comeaux's
    Poche's
    Savoie's - you can probably find it locally. The other two are mail order.

    I went out recently and made a gumbo with some Conecuh brand smoked sausage from Alabama..I was pleasantly surprised with the result. Still prefer Andouille, but was in a bind.

    We call that gas station (Conoco) sausage around here.
