Looking to maybe grab an upper for my boy to shoot deer with. Anyone shoot a 16” barrel on theirs? As small as he is, I kind of figure that a 16” would be easier for him to manage.

I have two a 14 and 16 and are both are very similar in speed and easy to handle
Mine is 16". I almost always shoot it with a can but it's still manageable length. I think it's a great deer rifle. Damn accurate and plenty oomph out to longer ranges than most folks will ever shoot. I get a shade over 2400 fps with factory ammo in 123gr SST.
I shoot an 18" and have been very happy.
If I was buying it just for me, I’d go 20” barrel. Sounds like a 16” will tip deer over just fine though.

Something to consider is threshold expansion velocity. This varies with bullet design but is typically around 1800 fps for typical “soft” bullets such as Ballistic Tips and Gamekings. Note this does not mean full expansion at that velocity….just partial expansion. Obviously it also depends on what the bullet strikes as to how much it will expand. Some designs such as 30-30 bullets have thinner jackets and are designed to expand at much lower velocities. The purpose of expansion is to transfer energy to surrounding tissue by decelerating quickly in a relatively short distance. Frontal diameter from expansion is an important parameter in the transfer of energy.
I have a Labradar that measures velocity out to 100 yards and beyond. Typical velocity drop at 100 yards is around 200-250 fps depending on a number of variables.
You can do the math but for the Grendel to do its thing beyond a couple hundred yards means that it needs as much velocity as you can get away with. This usually means a longer barrel or bullets designed for lower velocities. I once called Nosler about the Accubond LR which advertises a low threshold expansion velocity. I was informed that only applied to certain LR bullets but the tech didn’t say which ones. ????

Look into the 350 legend.
My Grendel has a 16” barrel. I shoot 129 ABLR. With the barrel length and ballistics I am confident with the bullet expansion threshold anywhere I will be hunting around here.

I have been shooting a Grendel built around a Larue upper with an 18" barrel for a while now, with good results. I wouldn't go any shorter to keep velocities up. The load it likes best is the Alexander Arms ammo built on the 129 grain SST.
