    Good job, ECU. I think the whole smoking process is awesome. And I swear it tastes better when the finished product is of your own hands.

    They look awesome. I cook mine in a similar process, never had a complaint or a pile of leftovers. Gonna give the Mixon marinade a try.

    It's takes time but end result is worth it.

    Oh, and the Leek is the perfect all around knife. Need to replace mine that is somewhere on the bottom of Big Bay Creek.

    ribs are easy, but if anyone wanting to learn looked at his recipe, he'd left this information out.....i've never tried marinating mine either, only pull the membrane and light season on an offset.....not much to em.....the turkey breast yesterday may be the only thing easier
