Is there a risk of over cooking or can you cook the wood too long?

Don’t think so. More common to undercook if you try pieces of wood that are too big. I’ve found if you do run bigger stuff, it’s best not to overcrowd/pack it too tight. I tried to do both yesterday, but it turned out ok.
