I don't have the brain power to think about it in depth.. I do like them fried and grilled. I don't like them overpowered.

Hank Shaw has a pretty good seasoned buttermilk soak recipe for quail. I like to split the whole bird in half then deep fry at 350 for 5 minutes or so.

I’ve grilled em, seared em, gumboed em, but I keep coming back to fried with grits, gravy slaw and biscuits.
I like them fried with rice and gravy. I don’t get to eat them enough to mess them up. Sometimes I’ll go full trailer park and cook rice-a-roni with quail and doves. I love that stuff.
I think the last time I had quail before this week was 10 or so years ago. Was in a deer hunt in south Texas with my granddad. After getting out of the stand, we went to one of the windmill tanks to shoot some doves. On the way to the tank, a covey crossed the road. We got the lab out to flush them, killed 3 or 4. Continued to the tank and upon shooting the first volley, 2 ringnecks jumped off the tank and my grandad pulled off a scotch double. After shooting our limits in about an hour, we headed in for breakfast. When we got back to camp after the afternoon hunt, my grandma had taken those quail, ringnecks, and a few of the doves, and made some sort of stew in a Dutch oven. Damn that was good.
