    I just inject with creole butter and coat very well with cajun seasoning

    Get temp up to 350-375 and drop bird in, you will get big boil of oil but it will settle down (use the turkey stand and metal hanger thing to drop in. works well. I actually have a big basket, I spray inside of it with PAM and use it instead.

    3 1/2 min per lb for WHOLE turkey, turkey breast takes longer per lb

    I always use instant read meat probe to check

    Temp will drop when you put turkey in , may need to crank it back up but try and keep around 350


    I pull it out and have newspaper spread out on stainless table on cooking deck and let it rest.

    Very simple to be honest I like 14-16lb birds. I have fried larger but can be tad bit tricky, easier to fry 2 14lb birds instead of 1 20lb one

    All good advice, especially the smaller bird recommendation.

    Do a displacement test. Bird in an empty pot. Fill with water to cover the bird. Remove bird and mark the water level. Now you know how much oil to add.

    After removing the water and drying that bird off off course.

    Then punt that idea and smoke it.

    I like to use 10-12lb birds for the fryer and smoker, brine in a cooler, inject the fryers..drink cheap beer

    Piece of cake, AB. Easier to smoke spatchcock style than traditional.

    We're smoking one, frying two, and we'll have a couple of roasts and a couple of butts as well.

    If you are thinking about roasting a turkey in the oven, then your culinary skill are on par with a first grader. When that nasty thing is done, punt it like a football into a damn swamp and let the coons have it.

    Not all oven roasted turkey is terrible. It's just that 90/% it it is.

    Also, if you take the drippings, or skim the fat off of the stock (if you make that) whip it in with some butter. delicious.
