    Default Smoked standing rib roast for the win

    My wife and mother went out of town for the day and i was at home on youngin duty so i called my dad this morning and asked him what he wanted for dinner. Told him i had a rib roast in the freezer so we went with that. Paired with grilled zucchini, squash, and mushrooms. Worked out well as it finished on the smoker about the time the wife and my mom roller back into town. Went simple with a binder of Mr. mustard and minced garlic and a heavy dose of kosher salt and black pepper.

    I will be honest i was second guessing myself because im not big on using recipes but i really like the amount of spices that are in that mustard and the flavor profile they give off. The mustard flavor was still pretty strong untill 117 degrees when i pulled it and let it rest 25 minutes. Then i jacked the temp up to 425 degrees and seared it off on all sides to 135. At that point i didn’t taste the mustard anymore but the rest of the spices came thru in the crust.

    I did one last night as well. Teeter had them on sale for $7.99/lb. Little rarer than i like, but the family ate it up.
