    Cabbage. I enjoy a chopped head of cabbage in mine which goes in first with the onion.

    I picked up the ice trick doing crawfish when I lived in Mobile. Finish up everything else, add the shrimp or crawfish, and then add ice to stop the cook. Then let everything soak in the flavored water/broth for as long as you want.

    I have also gotten to the point where I use the smallest potatoes I can find, season them with salt pepper olive oil give them a quick cook in the microwave and add them at the very end.

    A coworker invited me over for a low country boil one weekend. He was from Ohio.

    He put chicken legs in it.

    Still haven’t gotten over it.

    I have taken to roasting the potatoes in the oven and adding them at the table. I prefer not having my shrimp covered in potato starch.

    I like the okra and cabbage ideas. I may try it the next time I do a small batch.
