Yeah fresh deer heart and liver with a little onion is hard to beat. Best cooked at the skinning shed.

Holy moly, that brought back memories. I grew up hanging out at a private skinning shed/walk in cooler near Rock Hill. My buddy’s uncle would take the heart out of every deer that came in. Sliced thin, yella onion, salt and pepper, in a cast iron skillet. If you put a helping of it on top of your head, your tongue would beat your brains out trying to get to it.

One of my junior high teachers ate deer heart. All three of us boys years apart in school would bring her one the Monday after Thanksgiving.
Sounds like Miss Spigener. I brought her a limit of doves in 3rd grade and never had to open a dictionary the rest of the year...
