    Default Onion Sausage Recipe

    Friend of mine has the opportunity to take several 125-150 lbs. wild pigs over the next few weeks. His chosen processor (Anderson area) has never made onion sausage before.

    Any of y'all have any recipes/proportions to get the old boy in the ball park with something decent?

    What we have always done is leggs seasoning. Usually more than the packet calls for and then we just eyeball onions. Dice up 5 or so for about 20 pounds. Put some in. If it looks skimpy add some more. Was always told to have a hot frying pan ready so you can make a patty or a short link and taste it right then and there.

    Making sausage is really a lot more simple than most people think

    Adding if we are mixing with venison we usually do a 50/50 split

    I get pork fat/trimmings from the butcher to add to my wild sausage, and use fresh sweet
    Onions. And of course Leggs, sage and red pepper

    its regular sausage with onion powder in it. adjust to taste.
    my uncles recipe is 4oz sausage seasoning and 5oz onion powder per ten pounds
    Ugh. Stupid people piss me off.

    I've got a pretty handy spreadsheet with 18 different sausage recipes and some jerky recipes. Shoot me a PM if you want it.

    Sausage should taste like sausage. If you people want it to taste like onions, add some onion powder and leave us normal people out of it. Nasty M************
