    I cut the sides in half and freeze them. When I get ready I take them out and cure them for 10 days. Wash them and throw them on the smoker for a couple of hours. Wash them again and chill in the fridge overnight. Slice them in the morning. Damn good eating

    1 cup brown sugar
    1/2 cup non-iodine salt
    1 1/2 tsp of #1 prague powder
    That’s for five pounds. Sides usually are around ten pounds. I cut them in half and rub them with the recipe. Put each half in a 2.5 gallon zip lock bag and lay it in the fridge. Flip them over everyday for 10 days
