    Soak in Italian salad dressing for 24 hours, drain, soak in Dales for 24 hours. Wrap in bacon. Grill.

    its a beautiful flaky white meat that is easy to dry out on the grill or stove top.

    plenty of good options above (minus the dale's.....maybe).

    Wahoo is sweet when it’s eaten raw. Probably my favorite way to eat it.

    It’s also good fried.

    If you freeze it, you fucked it up. But there’s a recipe for that. Put the fish in a baking dish with salt, pepper, and maybe some lemon juice. Take liberal and equal parts mayonnaise, spicy deli mustard, and horsey sauce, blend it, and cover the fish. You shouldn’t be able to see the fish under the sauce. Bake at 350 for about twenty minutes.

    All of the above except for the Italian dressing/dales thing. Don't freeze it. Give the excess away fresh to someone who will eat it immediately.

    We generally lightly blacken ours either on the grill or on a hot skillet. Over cooking is easy and should be avoided at all cost. Enjoy!

    Yes, blackened wahoo is very nice. Put the fish on a bed of angel hair pasta with a hint of pesto and top it with a veloute sauce with crabmeat or chopped shrimp.

    That sounds good, Fish. Been eating it every day basically the same in different dishes. Just seared in butter and eaten with rice/soy sauce, on its own, tacos, etc. Grilled, too. A friend smoked some and said it was good. Still have a good bit vacuum sealed and frozen.

    68” fork length and 29.5” girth puts this fish pretty damn big. Bottomed the 60 pound boga before it was off the ground and couldn’t find a scale before I needed to get it cleaned.

    There's a great wahoo recipe. If I remember correctly, its marinade in 50/50 olive oil and lime juice, mixed with a tablespoon of cayenne. Then grill. The cayenne doesn't add the heat you'd expect, just enough to make it pop. They used to serve it at the old Pawleys Island Inn.

    I'd say they same as above.. pan sear in butter, raw, or grilled. It's not worth a damn at least to me frozen or overcooked
