    IOP sheepshead, one of my nephews caught very nice sheepshead couple weeks ago at IOP. He is not much of a seafood person other than fishing. Took it back to our house and had nice meal with it. House Autry and peanut oil

    I had sheep last night dredged in Panko crumbs with a little Tony Chachere's and seared in a pan with a very little ghee. It's a lot lighter than a full-on batter crust and not nearly as messy in the kitchen. It was fantastic.

    Atkinson's seafood breader is the best out there for fish. Nice and light crust. I hate fried fish where all you taste is batter.
