I am fond of taking a flounder and splitting down the lateral line, and scalloping out from backbone to stuff with crab meat, then topping with swiss cheese (binder) and finishing with bearnaise sauce. Wonder what that would be like with the cream cheese. Someone try it and report back. I dont want to fuck up a flounder...
