    Yes. Etoufee requires a Roux. And the trinity. And tomatoes. I also add some L&P worchestershire and paprika to mine . It's another recipe that you can adapt to your liking. It should be flavorful, but not overly spicy. You can add hot sauce later if you want heat. I only use Crystal brand for that.
