    There's a line when you're doing it.. i whole pick mostly everything, probably more then half of my doves now too. Probably 75 percent of my ducks, all depends on what kind.. there's some with good fat, then there's bad fat, skin..

    You want to cook it hot and fast, if you want crispy skin, but it's still not going to be fat domestic duck skin. Or hot then, slow smoke, it took me a bit to get it down. Either way, it's worth it flavor wise, and making use of the ducks. Legs and all of that come into play

    I like cold water crappie and bream too.. pre algae bloom. That's just good eating there.

    I appreciate the tips, I did some indirect heat on the grill then finish seared it. I did like the spatchcocked prep of the bird and will do that more often.

    I little off topic but I've boredom searched many threads and pic's and HS you make one damn good looking tomato pie. (amongst many other things)
