I have a worksharp and only use it for quick sharpenings on cheap knives. Even with the angle helper it puts different bevels on each side of the knife.
Dont use both sides of the sharpener....one is travelling N-S, the other is traveling S-N. When I use mine, I remove the guard and do it free hand and then flip the blade and do the other side. on the same side of the belt.

Just buy a new knife when it gets dull or you break/lose it. Whichever comes first.

If you keep up with your blades, the strop is all you need. However, most folks don't keep up with their knives and that's when using 220/600/1200 grit diamond stones from EZ-Lap (a lot cheaper than most) come into play to remove the dings and damage prior to finishing on the strop.
The bur being formed will be pushed to the opposing side from the side you are sharpening. Will always be on one side or the other. Once you get a fine bur it is time for a strop with compound. You don't have to get fancy with it. An old wide leather belt works. Rub some compound on it and pull the blade backwards on each side, back and fort at the same angle you were sharping at.
OR use a worn out work sharp belt flipped inside out. apply the compound to that surface and, WITHOUT guard, strop it so the blade does not cut toward the belt as it is spinning. enjoy
