    Default lymph node in a deer shoulder?

    got a friend talking about curing and smoking a whole deer ham.
    he asked about a lymph node buried deep in that shoulder that people remove prior to starting this process.

    I told him I had never heard of that.

    anyone?? if so, where the hell is it and how do you go about removing it???

    Pre-scapular node. It's on the front edge of the shoulder blade buried in that triangle wedge shaped hunk of fat.

    Remove that fat and the node is gone, which is why most folks don't see it.

    I slept in a motel this weekend so I know what's up.
