Got a 2018 Yamaha VMax 115 and it keeps cutting of at low RPMs. Cranks right back up and never cuts off when running 1/2 throttle to wide open. Any ideas?

Usually a 2 stroke issue
Any difference between in gear vs neutral?
Have a small portable tank you can hook up to and see if problems persist?
When running is it giving you any issues or RPM fluctuations?
I’d still get my hands on a portable tank with fresh fuel and bypass the fuel system for troubleshooting.
You using non ethanol fuel? My 115 would idle bad periodically before I started use non ethanol fuel. Run a can of seafoam in it when the tank was low and it would typically run better.
Have someone pump the primer bulb when its "cutting out" and see if it picks back up. If it does, check LP fuel pump for leaking behind it.
Also change the plugs, they are cheap and easy to do. Have your son put the plug change on his channel
Could also be Idle control valve or TPS slightly out of adjustment

I’d try some sea foam first.
That’s some good stuff and helps a lot with fuel issues on all types of engines

Could also be your shift interrupt switch out of adjustment, lots of things it could be
Do you have digital gauges and if so do they cut off when the motor shuts down? My bet is a ground/power issue. Some f115’s had a service bulletin related to a grounding issue. Had a fail to fire situation on my f150 a few years ago after it was warm, ended up being corrosion on the main ground to the block, cleaned it up and no further issues.
I had a Vmax that would cut out at mid range only (3000-3500 rpm) … was a ground issue. There is much electrical going on under that cowling. Check fuel first as described, and primer bulb and check all electrical connections on the main ground
