    Loin aka back strap

    Cut into 3" thick sections

    Butterfly and wrap in bacon

    Season to your taste. I like a little S&P and david wade's worcestershire powder.

    If ya want it even better marinate the butterflied chunks in V8 over night before wrapping in bacon.

    Grill to rare to med rare just like a filet mignon . DO NOT OVER COOK!!!

    Set meat out for one hour. Put salt and pepper on it. Slap it onto a piping hot cast iron skillet for a couple minutes, flip it and continue to cook till it hits 130 degree internal temp.....keep it simple

    I won't let my wife waste a tenderloin or backstrap in the cooker. She did that once and it was like shoe leather.

    Simple - I have no problem with beef at all, and it cooks better in the slow cooker than venison since venison is best when pink in the middle.
