Make a ragu. Season and Brown rabbit pieces. Set aside. In the same pan add carrots, onions, garlic and sauté. Sprinkle enough flour over the veggies to absorb the oil and cook for a couple minutes. Deglaze with red wine, scrape the burnt shit off the bottom(fond) add beef stock a big ass can of diced or crushed tomatoes. Then add fresh thyme, rosemary salt and pepper. Put rabbit pieces back in with mixture, cover and put in oven or on stovetop. Cook at medium low heat until tender. Pull rabbit pieces out, shred( chunky) add back to liquid. Serve over fresh pappardelle pasta with a little Parmesan. You can also add mushrooms at the end if you like. If it’s too thin at the end, make a simple roux and add a little at a time to thicken

I clean, batter, fry and make gravy at dinner time. Toss the fried rabbit in a crock pot while making the gravy then dump the gravy over the fried rabbit and set on low heat. Come supper time you’ll have a greatness that is hard to beat. Unless you do the same thing with squirrels, then it can’t be beat.

Brine
Rub bbq sauce
Wrap in bacon
Smoke at 225
Once desired crust is reached wrap
Cook to 160 deg
Pull let sit for 10 mins
