    Default Carnitas

    Never kept the legs and thighs from my turkeys all these years. Decided to keep them all this year and glad I did. I found a recipe for wild turkey leg and thigh carnitas. Crisping the meat in the iron with a little lard was the money ticket. These things were silly good. The wife was a big fan.
